Hummus of Beirut (حمص بيروتي)
An Ancient Dish of Beirut, one of the many cold mezze dishes which is so much better than the classic, simple hummus you are probably used to.

Instructions
Step 1
Put the chickpeas in a food processor and beat once, then add ice and beat again until it is completely mashed.
Step 2
Add the tahini, lemon juice, half the amount of olive oil, garlic, salt, pepper and cumin, and beat in the food processor until the ingredients are completely mixed.
Step 3
Place the chickpeas in a bowl and stir with diced tomatoes, diced pickled cucumber and chopped parsley, then transfer to a serving plate.
Step 4
Decorate with the rest of the olive oil and cumin oil and serve cold with pita bread.
