Ingredients
4 servings
2russet potatoes
medium, cut into 2 inch long sticks
1 headcauliflower
cut into small florets
3 tablespoonsolive oil
2 tablespoonsolive oil
1 teaspooncumin seeds
½ teaspoonground turmeric
1yellow onion
small, finely diced
red chili powder
1 tablespoonfresh ginger
julienne
1 tablespoonlime juice
1 teaspoonsalt
½ cupfresh cilantro
chopped
Instructions
Step 1
Preheat oven at 400 degrees. Line baking sheet with foil.
Step 2
Spread potatoes and cauliflower on baking sheet cover with olive oil.
Step 3
Roast 30 minutes or until browned and slight crisped. Turning once half way through. Let cool.
Step 4
Add oil to large saute pan. Once simmered as cumin seed for less than one minute. Reduce to medium. Add turmeric and onions. Cook 4 to 6 minutes or until translucent. Add red chili powder and ginger. Cook one minute.
Step 5
Carefully. Stir in potatoes and cauliflower. Add salt and cook 5 to 6 minutes. Remove from heat. Add lime juice. Garish with cilantro.
