Ingredients

1 x 14.5 ozcan fire-roasted diced tomatoes

⅓ cupsalsa

2Chipotle pepper
from canned peppers in adobo sauce

1 tspadobo sauce
from the canned chipotle peppers

1 tspcumin

½ tspdried oregano

¼ tspsalt

1.5 lbschicken breasts

4 cupsfrozen riced cauliflower

1 cupreduced fat shredded mexican cheese blend

0.5avocado
Medium, sliced
Instructions
Step 1
Combine first 6 ingredients in blender and blend until smooth.
Step 2
Place chicken in crockpot and pour sauce over.
Step 3
When chicken is cooked, shred the chicken (remove it if it’s easier, then place back into crockpot) and toss with sauce.
Step 4
Microwave riced cauliflower.
Step 5
To serve: Divide riced cauliflower, chicken, cheese and avocado evenly amongst bowls.
