2 tblsolive oil
1onion
diced
7 clovesgarlic
chopped
1 tspSplenda
1 tblChili powder
1 tblground cumin
1 tspground cinnamon
2 tspsoregano
2 tspsground coriander
1 lbground turkey
3 Tblstomato paste
2green peppers
diced
2 x 14.4 ozcans Fire Roasted Diced tomatoes
with juice
2 cupsturkey broth
1 x 15 ozcan black beans
drained and rinsed
12 ozfrozen diced Butternut Squash
bag
salt
to taste
pepper
to taste
Instructions
Step 1
In large pot heat olive oil. Add onion and garlic stirring until fragrant, about 30 seconds. Add all of the spices except salt and pepper.
Step 2
Add ground turkey. When turkey is cooked add tomato paste.
Step 3
Add bell pepper, fire roasted tomatoes and turkey broth. Simmer 20 min.
Step 4
Add black beans and butternut squash and simmer another 20 minutes. Add salt and pepper to taste.
