Chicken skillet lasagna

If you always have leftover lasagna noodles sitting around in your cabinet I have a great recipe to use them! It’s creamy and cheesy and an easy weeknight meal.

Instructions

Step 1
Preheat the oven to 375°.
Step 2
In a cast iron skillet or an oven safe skillet add 1 tbsp olive oil and sear 4 chicken breast 2-3 minutes each side.
Step 3
Take the chicken out, set aside, and add 2 minced garlic cloves to the skillet. Cook 1 minute and add 1/2 tsp salt, 1/4 tsp black pepper, 6 lasagna noodles broken, 1 cup chicken stock, 1/2 cup heavy cream, 1 tbsp Italian seasoning. Bring to a boil, and cook 10 minutes.
Step 4
add in 2 cups spinach. Let it wilt and add the chicken back in.
Step 5
Cover everything with 1 cup shredded mozzarella cheese bake in the oven 20 minutes or until the chicken is cook through.
