Instructions
Step 1
Boil noodles until al dente in a separate pot.
Step 2
Meanwhile, add a generous amount of olive oil to a large pan. Cook garlic and pepper flakes. Add tomatoes and salt, cook for another 3-4 min until to,stows start to break down. Then, add chopped parsley.
Step 3
Rinse mussels, then discard broken shells. Scoop a half a cup of the water from the boiling pasta, then pour into the pan with mussels.
Step 4
Cover pan and cook for 3-4 min on med-high heat. Remove lid, reduce to simmer. Remove shells that didn’t open.
Step 5
Add pasta to mussels, heat through, serve topped with more parsley and Parmesan.
