Instructions

Step 1
Boil some water
Step 2
Dry roast the chiles and peppers--allow skin to blacken but to not burn flesh. Place chiles in plastic bag and set aside for 20 minutes.

Pour boiling water over rice and let it stand for 20 minutes

Roughly chop garlic clove

Finely chop onion

Peel Chiles, scrape out seeds

Drain Rice, rinse well in cold water.

Put chiles, garlic, cilantro leaves and chicken stock in blender/food processor.

Heat the oil in sauce pan, add onion and rice, fry for 5 minutes over MEDIUM heat until the rice is golden and the onion transulcent.

Stir puree into saucepan, lower the heat and cover. Cook for 25 to 30 minutes.
Step 11
Add salt and garnish. Serve with lime wedges.
