Instructions
Step 1
Mix all the wet ingredients and sugar until well combined, make sure the butter is not too hot or else it will curdle the eggs.
Step 2
Add in the flour and baking powder and mix until just combined. Then pour batter into a greased (or lined with parchment paper) baking tray.
Step 3
Bake at 180C for 20-30 minutes. If you like it to be more fudgy, slightly underbake the brownies, or until when you stick a toothpick in the center and take it out, there are crumbs still stuck to the toothpick (but not wet batter). If you like it to be more cake-like, bake for a longer time, or until when you stick a toothpick in the center and take it out, there are no crumbs stuck to the toothpick.
Step 4
Let the brownies cool down completely. In the meantime, make the icing by combining powdered sugar with lemon juice. Add the juice a little bit at a time, and mix until you get the consistency you like.
Step 5
Once the brownies have cooled, pour the icing sugar over the top. Enjoy immediately, or let it sit for 30-60 min to soak up some of the icing for a softer consistency!
