Instructions
Step 1
Dice tomatoes
Step 2
Finely chop onion, garlic and the stilks from the fresh parsley
Step 3
Rinse lentils and bulgur until water becomes clear
Step 4
Heat up the olive oil in a pot and cook onion, garlic and parsley stilks until onion is translucent. Add bulgur, lentils, tomatoes, vegetable broth, dried mint and paprika.
Step 5
Once the soup gets to a boil, turn down the heat to low and let it slowly cook for 25 minutes or until the bulgur and lentils are tender.
Step 6
Serve it warm with a lot of parsley and lime or lemon. Taste with salt/pepper.
