Ingredients
2 servings

500 gmboneless chicken

¾ tspsalt

1 tsplime juice

2garlic cloves

1 ½ tspcumin

1 tspred chili

1 ½ tsporegano

1 ½ Tbspcooking oil

½ tsppepper

1 tspcooking oil

1green bell pepper

1red bell pepper

1yellow bell pepper

1onion
medium

1 tspchili flakes

1 tsporegano

½ tsppepper

1 tspcumin

1 tspsalt

1rice
cup, soaked

1 ¾ cupschicken stock

3 Tbspfresh coriander
Instructions
Step 1
1. Marinate the boneless chicken with salt, lime juice, garlic cloves, cumin, red chili, oregano, cooking oil and pepper for 20 minutes
Step 2
2. Drizzle cooking oil in pan and add the marinated chicken pieces
Step 3
3. Fry for 7-8 minutes on high heat then remove from heat
Step 4
4. Add bell peppers and sliced onions to the pan
Step 5
5. Fry for 2-3 minutes on high heat
Step 6
6. Add chili flakes, oregano, cumin, salt and pepper
Step 7
7. Add soaked rice and mix well
Step 8
8. Pour chicken stock and bring to a boil
Step 9
9. Add fresh coriander and cover with lid to cook for 20-25 minutes on low heat
Step 10
10. Remove lid and mix in the chicken before serving
Step 11
11. Ready to enjoy!
