Instructions
Step 1
If desired, peel potatoes. If necessary, cut potatoes into 1 or 1.5inch pieces.
Step 2
Boil potatoes until fork tender.
Step 3
Cook bacon until crisp. (Cool, crumble if necessary). Reserve 2 TBSP grease.
Step 4
To drippings-add mayo, mustard, sugar, and salt. Whisk to combine.
Step 5
In a large bowl, combine potatoes, eggs, celery, onion, and green pepper.
Step 6
Pour dressing over potato mixture and stir to coat.
Step 7
Stir in cooked crumbled/chopped bacon.
Step 8
Chill 3 hours before serving.
