Healthy Baked Lebanese Falafel

Inspired by the delicious original Lebanese falafels, this is a healthier version with fewer calories!
The coating of grinded rice cakes gives them an extra crunch.
Makes at least 12 falafels

Step 1
1- Drain chickpeas (keep chickpea water for another time-you can make whipped cream from this)
2- chop the onion and coriander, peel the garlic and chop it roughly.
3- add everything to a food processor, then add the salt, pepper, cumin, coriander powder and lemon juice.
4- Blitz everything, until semi smooth, you don’t want hummus consistency so leave the chunky bits if any left.
5- refrigerate for an hour (this can be skipped)
6- break up the rice cakes and blend to “almost smooth”, you can do this by hand by putting the rice cakes in a plastic bag and beating them up
7- heat up your oven, gas mark 7 (220C or 450F)
8- spray a baking tray with a bit of oil
9- make small patties with your hands and lightly coat each patty in the rice cake blend then put each patty on the baking tray
10- bake for around 30-40 minutes, turning the falafel halfway through
11- remove from oven and serve immediately Serve with tahini sauce for extra deliciousness! Bon appetit
