Instructions
Step 1
Sprinkle salt, black pepper, garlic powder & cooking wine over lamb chops. Let sit for 1 to 24 hours. (Store in fridge).
Step 2
Heat a heavy-bottom skillet (e.g. cast-iron) over medium high heat for 2 mins.
Step 3
Add lamb chops, fat side down first. Cook 2-3 mins or till golden and fat renders.
Step 4
Turn to the side, cook 1-2 mins per side (internal temp of 135F, medium rare), add 1 more min if you prefer more cooked. Turn only once.
Step 5
Move to a plate. Let rest for 5 mins. Serve immediately with your favorite sauce.
