Instructions
Step 1
Carve bird, seperating the dark meat from the white. Split the breast in two if needed to fit into bags.
Step 2
Preheat Sous Vide, you will need two. Set one for white meat, 135 and one for dark meat, 155.
Step 3
Once the water is up to temp, add the sealed bags of meat no more than 24 hours and no less than 12 hours before eating time.
Step 4
Pre heat cast iron pan and coat with oil. Sear turkey on all sides.
Step 5
Carve and serve.
