Instructions
Step 1
Aubergine sliced charred on both sides ( can cut slices and leave in salty water for an hour)
For the Sauce
Step 2
Sautee onions for a min, then add minced garlic, add 1 tsp salt, sautee on medium flame until onions are soft

now add spinach and wilt for 30 seconds,

then add pasta sauce
Step 5
cover a cook on low flame for 3-5 mins ( do not let the sauce dry)

lastly add salt and pepper to taste and add crumbled paneer. switch off flame and don't cook further as paneer might get chewy

Sauce is ready
Layering pasta

Take an oven proof bake dish

First spread a little sauce at the base

add a roti,

then layer1/2 aubergine ,

then 1/2 of the prepared sauce

sprinkle some parmesan and cheddar to cover lightly.

Again repeat a layer starting with roti.

Finish on top with a little extra cheddar and sprinkle some breadcrumbs

Bake in a preheated oven for 10 mins at 220 degrees c
