Instructions
Step 1
Make ramen according to instructions in large pot and set aside to drain.
Step 2
Cut scallions into 1” chunks, ginger into 1/2” chunks and pulse in food processor until minced. Do not over-pulse or it will become a paste.
Step 3
Put scallions and ginger into same (now empty) large pot and over salt to taste. The oil once added will absorb that salt easily.
Step 4
Heat peanut oil on medium high in a small saucepan until wisps of smoke are obvious.
Step 5
Add hot oil to scallion-ginger mix and cover. It should sizzle and make a lot of noise. Add prepared ramen noodles to pot when sizzling stops and mix well.
Step 6
Good additions: roasted asparagus or broccolini, peanuts, fried tofu, or marinated & baked tofu (see sesame ginger marinade recipe), sesame seeds.
