Chicken Yakitori

While traditional Yakitori sauce uses soy sauce, mirin, and rice wine, this recipe uses a more simple sauce recipe and more easily obtainable ingredients.
Most Yakitori recipes also only have scallions and meat in however, a more balanced recipe with veggies and rice should give you a healthier and more complete meal.

Grate the ginger, mince the ginger, and whisk together the garlic, ginger, soy sauce, and honey in a bowl.

Cut the chicken, onion, and bell peppers into bite sized pieces.

Place chicken, mushrooms, bell peppers, and onion onto skewers then brush the honey-soy sauce onto the skewers, set aside.

Add rice, water, and bouillon to a cooking pot and bring to a boil then reduce to a low-medium heat, place a lid on it and cook until most of the water has been absorbed and the rice is thoroughly cooked. Then turn off heat and let sit until ready to serve.

Grill the Yakitori, turning as needed, and brushing more honey-soy sauce as needed.
