Instructions

Step 1
Bring to a boil a large pan of water and add a tsp of salt.
Step 2
Now add in the spaghetti.
Step 3
In a large saute pan add the butter and then the pancetta. Once the butter has melted add in a smashed garlic clove, and the chopped chilli and stir until the pancetta is crispy. Remove the garlic clove from the pan and discard.
Step 4
Add the spaghetti straight from the pan (do not drain )into the pan with the pancetta.
Step 5
Add two ladles of the pasta water, season with salt and mix with well the butter and pancetta. Season with salt and pepper.
Step 6
In a bowl crack in 2 eggs and add in the grated parmesan then mix.
Step 7
Add in the parsley leaving a little for garnish Now pour the egg mixture over the spaghetti turn off the heat and mix well.
Step 8
Plate up, garnish with more parsley and grated parmesan, Lick you’re lips and enjoy.
