G - 10-Min Pancetta & Mushroom Alfredo
This dish is super speedy, thanks to quick-cook pasta... and a few other little nifty tricks! The creamy sauce is packed with flavour thanks to garlic paste, mushrooms (just tear 'em in!) and speedy pancetta lardons. Topped with plenty of grated cheese and fresh chives, this is one for all the family to enjoy!

Boil a kettle
Step 3
Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat

Once hot, add the pancetta lardons and cook for 2 min
Step 5
Add the spaghetti to a pot of boiled water with a large pinch of salt and bring to the boil over a high heat
Step 6
Cook the quick cook spaghetti for 3-4 min or until cooked with a slight bite
Step 7
Once done, drain the quick cook spaghetti, reserving a cup of the starchy pasta water
Step 8
While the spaghetti is cooking, crumble the mushrooms into the pan
Step 9
Add the roasted garlic paste and cook for 30 sec
Step 10
Add the wine, soft cheese and a generous pinch of salt
Step 11
Give everything a good mix up and cook for 2 min further
Step 12
Meanwhile, snip the chives with scissors
Step 13
Add the drained spaghetti to the pan with the sauce and give everything a good mix up
Step 14
Cook for 30 sec further or until the sauce begins to stick to the pasta – this is your pancetta & mushroom alfredo
Step 15
Tip: Add a splash of the starchy pasta water if your sauce is looking a little dry!
Step 16
Set the pancetta & mushroom alfredo in the centre of the table, ready to share
Step 17
Top with the grated Italian hard cheese and snipped chives
Step 18
Season with a grind of black pepper and let everyone dig in
