Instructions
Step 1
Crack the eggs into a bowl and add salt, then whisk.
Step 2
Set the pan over very low heat and add butter.
Step 3
Pour the eggs into the pan through a mesh sieve.
Step 4
As the eggs start to set, scramble ising a rubber spatula. Remove the pan from the heat before the eggs are completely done.
Step 5
Stirr in cream fraiche.
Step 6
Spion onto the baguette with salad, ham, parsley, tomato and salt
