Instructions

Step 1
Grate your cheese. For this recipe, I used smoked Scamorza, but you can use Provolone (smoked or regular), Gouda, Edam or Gruyère instead.
Step 2
In a pan over medium low heat, add heavy cream and milk and let it cook for 2/3 mins or until it starts to bubble.
Step 3
Lower the heat, add your grated cheese and mascarpone and cook for 3/4 more mins or until the cheese is completely melted.
Step 4
If your sauce comes out lumpy, don’t worry! Simply mix everything with a blender and filter your sauce with a sieve.
Step 5
In the meantime, boil your gnocchi in some salted water for the time indicated on the package. Drain and add your gnocchi to your sauce.
Step 6
Mix everything together, adding a couple of spoons of gnocchi water if necessary.
Step 7
Turn the heat off, add your grated Parmigiano and some freshly ground black pepper mix one more time.
Step 8
Serve with some more grated pepper on top.
