Instructions
Step 1
Chop your onion and peppers.
Step 2
In a pan over medium-low heat, sizzle your chopped onion with a drizzle of olive oil for a couple of minutes.
Step 3
Add your chopped peppers, season with salt and cook for a couple more minutes.
Step 4
Add one ladleful of boiling water, cover with a lid and cook for about 15 mins or until your peppers are soft. Stir occasionally.
Step 5
Now, add heavy cream and saffron and simmer for a couple more mins to combine all the flavours together.
Step 6
Add your pepper sauce to a blender and mix everything together until super creamy. If your sauce is too liquid, simply add it back to the pan and cook it very slowly until it thickens.
Step 7
In the meantime, boil your pasta in some salted water, drain and add it to your sauce.
Step 8
Season with black pepper, add some pasta water if necessary and toss well over the heat to combine all the flavours together.
Step 9
Turn heat off and add your grated cheese. Stir one last time.
