Tomato-free Bolognese

Instructions

Step 1
Heat 1 tbsp olive oil in large saucepan over medium heat. Add onion, celery, and carrot. Cook until softened, but not browned.
Step 2
Add garlic, red pepper flake, Italian seasoning, and salt to taste. Cook until fragrant, about 30 seconds. Remove mixture and set aside
Step 3
Add remaining tablespoon olive oil to saucepan and increase heat to high. When oil is shimmering, add ground turkey. Season to taste with salt and freshly ground black pepper. Cook until browned on the outside and fully cooked (about 7 minutes).
Step 4
In a pot of salted, boiling water, add your pasta. Cook to about 1 minute less than the package recommendation
Step 5
Turn down heat to medium-low. Add reserved vegetable mixture, sliced peppers, Ajvar, chicken stock, and fish sauce. Mix well and bring to a bare simmer. Continue cooking until pasta is ready
Step 6
When pasta is done cooking, transfer directly to sauce. Transfer some of that pasta water as well to help the sauce stick to the pasta
Step 7
Stir in chopped parsley, then plate
