Today, I will share a fun way to enjoy potatoes by making a Korean pancake, called Jeon, with it. Though it is unique since you can grate, julienne or slice potatoes to make the Jeon, today’s recipe is even more unique in the shape and texture of the jeon. The crunchy potato dipped in a special dipping sauce is mouth-watering. As usual, you will love to see how simple this tasty recipe is.

Step 1
First, let’s make the batter by mixing ½ cup of Korean frying mix (or Korean pancake mix; normal wheat flour), 4 pinches of salt, and 7 Tbsp of cold water together.
Step 2
You will get this runny consistency for the batter.
Step 3
Get 2 or 3 potatoes you like and peel the skin off.
Step 4
Slice the potatoes into about ⅛ inch thin slices. We will need about 2 cups.
Step 5
Put the potatoes into the batter and mix them well, being sure not to crush the potatoes.
Step 6
On a heated nonstick pan, drizzle 2 Tbsp of cooking oil.
Step 7
Place each potato slice in the pan so that they touch each other. Fill the small empty space between the potato slices with the remaining batter to make one big piece of Jeon. Fry it for about 5 minutes on medium heat.
Step 8
Meanwhile, we will make a delicious dipping sauce you can use not only for this Jeon but also for any other Jeons, dumplings, fried tofu, etc.
Step 9
Cut 2 Tbsp of sweet onion into ½ inch cubes, slice 1 tsp of garlic thinly, and chop 1 tsp of red hot pepper into small chunks.
Step 10
Mix all the ingredients for the dipping sauce together: 1 Tbsp of soy sauce, 1 Tbsp of water, 1 tsp vinegar, ¾ tsp sugar, ½ tsp sesame seeds, and all the chopped veggies.
Step 11
After 5 minutes, flip the pancake and fry the other side for 3 minutes on medium. It is fun to take off each slice of potato from the jeon when you eat it.
