Ingredients
4 servings
1 Tbspolive oil
2garlic cloves
minced
1onion
2courgettes
1red pepper
2 Tbsptomato paste
1 TbspItalian herb mix
1 tspgarlic powder
1 ½ tspchilli flakes
½ tspsalt
½ tspblack pepper
1 tsppaprika
2 x 400gchopped tomatoes
cans
400gBeans
can, Cannellini, Black Beans, Borlotti
400gSweetcorn
can
700mlchicken stock
300gpenne pasta
1broccoli
120gcheese
grated, For a more gooey option use Emmental, Cheddar or Mozzarella For a less gooey option use Parmesan, Gruyère, Sbrinz etc
Instructions
Step 1
Heat oil in a large pot over medium. Add the garlic and onion and cook slowly for 3 to 4 minutes until onion is translucent.
Step 2
Turn heat up to medium high, add the courgette and red pepper. Cook 1 1/2 minutes.
Step 3
Add the tomato paste, garlic powder, salt, pepper, canned tomatoes, sweetcorn, and beans and stir well.
Step 4
Add the chicken stock and pasta to the pot. Allow it to come to a boil, and cook until the pasta is almost al dente, about 8-12 minutes.
Step 5
Once the pasta is done, add the broccoli to the pot, along with the herb mix, chilli flakes, paprika.
Step 6
Stir in half the cheese and continue cooking on a low heat until the broccoli is cooked but not collapsing and the sauce has thickened a little, about 4 minutes.
Step 7
Top with remaining cheese, put lid on. Leave for 1 minute until cheese is melted and serve immediately.
