Step 1
Dice onion and bell pepper.
Step 2
Sauté onion, bell pepper, and sausage on Med-High in a large sauce pot. Cook until onion is translucent and sausage is mostly cooked.
Step 3
Add diced tomatoes, garlic, and seasonings. Cook until the water has cooked off and the mixture is a rich red paste.
Step 4
Turn off the burner and add your rice. Rice that is cooked the night before is best, because it holds together; fresh rice is more prone to becoming mushy. Gently fold the paste into the rice, until they are well mixed.
Step 5
Turn the burner to Med-Low. Cover the pot and stir occasionally until the rice is revived.
