LENTIL BOLOGNESE 🍝

Spaghetti Bolognese used to be one of my favorite dishes when I was younger. 😋
For the vegan version I like to use lentils instead of meat, they’re also a good source of protein and make this sauce hearty. 🙌

RECIPE (4 servings, 45min prep time):
-2 onions
-4 cloves garlic
Finely chop and sautée in a few Tbsp oil
-2 carrots
-2 stalks celery
Add to the pan and fry for 4-5mins
-3 Tbsp tomato paste
-1/2 cup (125ml) vegan red wine (optional)
Add it and let the wine cook off.
-2 can (total: 440g) lentils
-3 cups (750ml) tomato sauce
-salt and pepper to taste
-2 Tsp dried Italian herbs
-2 bay leaves
Stir everything in and let it simmer 20-30mins.
-350g pasta if your choice
Boil the pasta Al dente.
Stir it in the sauce with some pasta water and serve.
