Ingredients

1 bunchlacinato kale
stemmed and chopped
6 tablespoonsextra-virgin olive oil
3 tablespoonslemon juice
2 tablespoonsshallot
chopped
1 teaspoonhoney
½ teaspoonsalt
¼ teaspoonground pepper
2 cupsgrape tomatoes
or cherry, halved
2 cupsquinoa
cooked
1english cucumber
thinly sliced
1red bell pepper
medium, sliced
1yellow bell pepper
medium, sliced
1 x 15 ouncecan unsalted chickpeas
rinsed
¾ cupfeta cheese crumbled
½ cupsliced almonds toasted
Instructions
Step 1
Place kale in a large serving bowl.
Step 2
Whisk together oil, lemon juice, shallot, honey, salt and pepper in a small bowl.
Step 3
Pour 2 to 3 tablespoons of the dressing over the kale; lightly massage until slightly wilted, 1 to 2 minutes.
Step 4
Top the kale with tomatoes, quinoa, cucumber, peppers, chickpeas, feta and almonds. Drizzle with the remaining dressing and toss before serving.
