Instructions
Step 1
Peel and mince garlic. In a large bowl, whisk together garlic, lemon juice, olive oil, oregano, salt and black pepper.
Step 2
Drain and rinse chickpeas. Place on paper towels and pat dry. Add to bowl with dressing and toss to coat.
Step 3
Peel, medium dice and add onion to the bowl.
Step 4
Wash and dry tomatoes, cucumber and bell pepper. De-seed the pepper, then medium dice all and add to bowl.
Step 5
Wash and dry parsley. Remove and mince the leaves, discarding the stems. Add to bowl.
Step 6
Chop or crumble the feta onto the salad and gently mix. Serve.
