Instructions
Step 1
In a pan over medium low heat, add olive oil and butter and sizzle for a minute.
Step 2
Add chopped garlic and onion and sizzle for 90 seconds, add white wine or vegetable stock and simmer for about 4 mins or until the alcohol completely evaporates/ stock reduces.
Step 3
Add heavy cream, season with salt and pepper, add half a ladle of pasta water and simmer for another 7-8 mins or until the cream reduces.
Step 4
In the meantime, boil your pasta until al dente then add it to your sauce.
Step 5
Toss well over the heat to combine all the flavours together, adding some pasta water to make it mamma mia!
Step 6
Turn heat off, add grated Parmigiano cheese and freshly chopped parsley and stir one last time.
Step 7
Serve with some more parsley and chilli flakes.
