Shrimp, Spinach and Cherry Tomatoes in Garlic Butter Sauce

Ingredients

1 poundraw shrimp
deveined and peeled
17.6 ozPenne Rigate Pasta
Ziti, I used organic semolina
1 tablespoonbutter
1 tablespoonolive oil
6cloves garlic
chopped
1shallot
small, chopped
2 stalksgreen onion
chopped
1lemon juiced
1 pintcherry tomatoes
salt
to taste
pepper
to taste
1 teaspoonoregano
16 ozbaby spinach
0.25 TeaspoonChili flake
1 TeaspoonBasil
or 4 fresh Basil leaves chopped
Instructions
Step 1
Prepare pasta accordingly, set aside
Step 2
Heat and combine oil and butter in large non-stick pan
Step 3
Add Garlic, shallots, green onions, half lemon juice and basil to mixture until translucent
Step 4
Shrimp pat dry and coat with salt, pepper, oregano and chili flakes
Step 5
add shrimp to mixture, cook until shrimp is starting to turn pinkish as tomatoes and continue to cook shrimp until pink.
Step 6
Add spinach and remainder of lemon juice
Step 7
Continue cooking for 1-2 minutes until spinach is wilted, stirring frequently
Step 8
Once wilted add pasta and serve immediately
Step 9
Garlic bread is a good addition to soak up the extra sauce.
