Wash lentils until clean and place in a pot to cover with water and simmer covered until tender, about 30-40 mins.

You may need to add more water if necessary.

Sauté the onions in oil.

Combine the curry paste, curry powder, turmeric, cumin, chilli powder, salt, sugar, garlic and ginger in a mixing bowl and mix well.

Once onions are cooked, add the curry mixture and cook on high heat, stirring constantly for 1-2 minutes.

Stir in the tomato puree and reduce the heat, allow the curry base to simmer slowly until thickened.
Step 8
When the lentils are tender, drain them briefly.
Step 9
Mix the curry base with the lentils and serve immediately.
Step 10
Top with coriander and serve with rice or phutu.
