Ingredients

4 tablespoonsolive oil
1 cuponion
finely chopped
1 cupcelery
diced
1 cupcarrots
diced
4cloves garlic
minced
3 cupschicken
cooked, shredded
4 cupschicken broth
1 x 15 ouncecan pumpkin purée
or 1-7/8 cups cooked
½ cupheavy cream
1 ½ teaspoonssalt
½ teaspoonfreshly ground black pepper
1 cupgrated cheddar cheese
¼ cupfresh cilantro
finely chopped
Instructions
Step 1
Heat the oil in a large pot over medium heat. Sauté the onion, celery, and carrots until tender, stirring frequently, 10–12 minutes. Add the garlic and continue cooking for 1 minute.
Step 2
Add the chicken, broth, pumpkin, cream, salt, and pepper. Cook, stirring often, until soup is heated through. Add the cheese and stir just until melted. Remove from heat and serve garnished with cilantro.
