Instructions
Step 1
1. Cut the aubergines in half, cut them into small pieces, salt them and add a splash of olive oil.

2. Cook in the microwave at maximum power for approximately 12-14min. (You can also cook the garlic here for better digestion)

3. We remove the meat from the aubergines, chop it and put it in a bowl.

4. Add the garlic, pepper, cumin, egg and mix well.

5. We add breadcrumbs to obtain a thicker texture of the dough to be able to handle it later.

6. Let it rest in the fridge for 10-15min.

7. We put a frying pan on the fire with oil to heat and we begin to shape our meatballs, passing them through flour and frying them.

8. Once fried, we place them on an absorbent kitchen paper.

9. When we have them all we place them in a pan where we have our tomato sauce, cover and let cook for 5 min.
