No-Noodle Lasagna with Sausage and Basil

Low-Carb and Keto No-Noodle Lasagna with Sausage and Basil was inspired by three fun things I found at the grocery store, and this was so tasty!

Ingredients
8 servings
1 tolive oil
1onion
medium, chopped small
1 lblean ground beef
1 x 19.5 ozhot turkey italian sausage
pkg
1 jarlow-sugar pasta sauce
½ cupfresh basil
chopped, or use a few teaspoons of dried basil or a few tablespoons of basil from a tube if you don't have fresh basil
2 cupscottage cheese
4eggs
beaten well
½ cupparmesan cheese
coarsely grated
1 tspitalian herb blend
1 tspgarlic powder
4parmesan cheese wraps
2 cupsgrated mozzarella cheese
⅓ cupParmesan cheese
coarsely grated, to sprinkle over the top, probably optional, but good
Instructions
Step 1
Preheat oven 375 and spray casserole dish with non-stick spray.
Step 2
Heat oil in a large deep frying pan and saute chopped onion; then push onion over to the side and cook the ground beef and Italian sausage in the same pan.
Step 3
Add the Rao’s sauce (affiliate link) to the meat mixture and simmer until the sauce is thick.
Step 4
While the sauce simmers, chop basil (or use Herb Scissors (affiliate link) like I did if you have them!)
Step 5
Stir the chopped basil into the sauce.Mix the cottage cheese or ricotta, beaten eggs, 1/2 cup Parmesan, garlic powder, and dried herbs
Step 6
Spread half the meat sauce over the Folios.
Step 7
Then make a layer with half the cottage cheese mixture, followed by half the Mozzarella.
Step 8
Make another layer each of Folios, meat sauce, cottage cheese mixture, and Mozzarella. Sprinkle the grated Parmesan over the top.
Step 9
Bake Low-Carb No-Noodle Lasagna with Sausage and Basil for 40-45 minutes. (We cooked the lasagna in the photo 45 minutes but I’d start to check after 35 or 40 minutes.)
Step 10
Serve hot and enjoy! This freezes well and reheats beautifully in the microwave or in the oven.
