Instructions
Step 1
Preheat oven to 475 F. Heat 1.5 tbsp EVOO in a large wok over medium heat. Add onion and cook till tender.
Step 2
Add eggplant (and squash if desired) and cook till soft. Add gnocci, diced tomatoes (substitution: marinara sauce), 1/2 tsp salt, 1/2 pepper.
Step 3
Transfer to a 9" baking dish, bake for 15 min. Sprinkle with cheese (optional) and bread crumbs, bake for another 4-5 minutes till they are light brownm
Step 4
Garnish with basil and serve.
