2 lbspotatoes

3 lbsvegetable stock

1 tsptumeric

8 ozvegetable oil

8garlic cloves

1bay leaf

1 tspground ginger

1 tspchili powder

2 tspgaram masala

1 tspcumin

½ tspcoriander

Instructions
Potatoes
Step 1
Cut potatoes into even pieces

Step 2
Pour vegetable stock and turmeric into a pot and boil until the potatoes are fork tender.


Step 3
Drain potatoes
Step 4
In a separate bowl, pour vegetable oil, garlic, and bay leaf and let simmer on low temp for 30 mins.



Step 5
Remove garlic and put on the side for garlic dip.
Remove bay leaf.
Add spices to the oil.





Step 6
Add potatoes to a baking tray and pour the oil and spice mixture on top.
Step 7
Put the tray in the oven on 400 Fahrenheit for 45-50 minutes.
Turn the potatoes halfway through roasting.
Garlic Dip
Step 8
To a bowl, add mayo and yoghurt.


Step 9
Squash the garlic taken from the vegetable oil and add to bowl.

Step 10
Add salt, pepper, lemon, mint leaves, and coriander to the bowl and mix.
