1 cupoats
1 cupwhole wheat flour
1 cupbutter milk
1egg

½ cupbrown sugar
½ cupapplesauce
1 tspncinnamon
½ teaspoonsalt
1 teaspoonbaking powder
½ teaspoonbaking soda

Instructions
Step 1
Preheat oven to 180°C 20 minutes before baking your muffins. Line 12-cup muffin pan with paper liners and set aside.
Step 2
In a small bowl, combine old fashioned oats and buttermilk. Let mixture sit out at room temperature for 20 minutes.
Step 3
In a large bowl, mix together dry ingredients (whole wheat flour, baking powder, baking soda, salt, cinnamon, and brown sugar).
Step 4
Mix in the oat and buttermilk mixture along with the apple sauce and egg. Mix well until no lumps remain in the batter.
Step 5
Pour batter into prepared muffins tin. Do not fill more that ¾ full.
Step 6
Bake for 30 minutes or until a tooth pick inserted into the center of a muffin comes out clean.
Step 7
Allow to cool at room temperature and enjoy!
Tips
Step 8
If your muffin cups are filled more than ¾ full the muffins will have flat “flying saucer” tops. Leaving a little extra room will give your muffins plenty of space to expand before reaching the top.
