Step 1
Heat olive oil in a large pot and sauté diced onions.
Step 2
Add canned diced tomatoes, fresh basil, salt, and pepper to the pot and bring to a simmer for 10-ish minutes.
Step 3
Add tomato sauce and chicken broth to the pot and simmer for an additional 5-10 minutes.
Step 4
Remove from heat and allow to cool.
Step 5
Once cooled (but still steaming hot is fine, it doesn’t need to be cooled entirely), add almond milk to the pot and use an immersion blender to blend into a chunky-ish consistency. If desired, reheat to serve!
