Ingredients

3 ½ teaspoonslight brown brown sugar
or dark
3 tablespoonssoy sauce
1.5 poundsboneless skinless chicken breasts
cut into 1/2- to 3/4-inch chunks
1 tablespoonneutral oil
2garlic cloves
medium, finely chopped
5 tablespoonssalted butter
cut into 5
2serrano chilies
stemmed and sliced into thin rings
Scallions
thinly sliced on the diagonal Optional garnish
Instructions
Step 1
In a medium bowl, mix the sugar and soy sauce.
Step 2
Add the chicken, toss, then let stand for 10 minutes.
Step 3
Drain the marinade into a small bowl and reserve.
Step 4
In a large skillet, heat the oil until barely smoking.
Step 5
Add the chicken and cook, stirring, until no almost no pink remains.
Step 6
Add the garlic and marinade, then cook, stirring, until the chicken is opaque throughout.
Step 7
Off heat, add the butter and half the chilies, stirring until the butter melts.
Step 8
Season with salt.
Step 9
Serve sprinkled with the remaining chilies.
