Step 1
Preheat oven to 350F and prepare a steam bath. Add eggs, cottage cheese, pepper and salt to a blender. Blend until a smooth mixture remains. Pour into a silicone mini muffin liner and add mixture. Top with bell peppers or your desired toppings (bacon, spinach or onion) bake for 25 min and enjoy.
