These fritters are a simple way of turning a handful of ingredients into a tasty snack. You can use your own spice mix, a mild curry powder works well and any fresh green herbs. Nice with minted yoghurt or in a warm pitta with hummus and salad for lunch.

Step 1
Grate carrots and onion and mix together with 2 tablespoons of lemon juice, the spices, coriander, and salt and pepper.
Leave to sit for 10 minutes.
Add gram flour.
Add water to make into sticky batter.
Add shallow layer of cooking oil to the frying pan.
Bring to med/high heat.
Dollop dessert spoons of mix into pan and flatten out with back of spoon.
Fry both sides until golden.
