Spicy Stir-Fried Pork (Dwaejigogi-bokkeum)
I love how Maangchi has you throw all the ingredients right into the pan. No fuss with another bowl or time to marinade - and she’s right, it doesn’t need it. Serve with rice and some crunchy cool vegetables (a light cucumber salad would be amazing, or a simple salad). This is so rich and savory and comes together quickly - definitely a weeknight staple! Gochujang is a must, although you could use a little extra in place of the Korean Chile flakes if you can’t find them. I substituted a Serrano pepper for the Korean Chile and thought it was great. 10/10

Ingredients

1 poundpork belly
or boneless pork shoulder, cut into about 1 1/2-x-1-x- 1/4-inch pieces

¼ cupkorean hot pepper paste
gochujang

1 tablespoonkorean hot pepper flakes
gochu-garu

1 tablespoonsoy sauce

1 tablespoonsugar
plus 1 teaspoon, or honey

½ cuponion
sliced

3garlic cloves
minced

½ teaspoonginger
minced, peeled

1scallion
chopped

¼ teaspoonfreshly ground black pepper

1cheongyang green chili pepper
cheong-gochu, stemmed and chopped

2 teaspoonstoasted sesame oil

1 teaspoontoasted sesame seeds
Instructions
Step 1
Combine the pork, hot pepper paste, hot pepper flakes, soy sauce, sugar, onion, garlic, ginger, scallion, black pepper, chili pepper, and sesame oil in a large skillet and mix together with a wooden spoon.












Step 2
Set the pan over high heat and stir-fry until the pork is cooked through but still juicy and the onion is caramelized, 10 to 12 minutes.


Step 3
Transfer to a serving plate, sprinkle with the sesame seeds, and serve.
