Instructions

Step 1
Preheat oven to 200°C
Step 2
Pan fry chicken thighs until golden on each side. Set aside.
Step 3
Sauté onion and garlic. Pour in rice, spices, coconut milk and stock. Mix well.
Step 4
Nestle the chicken thighs on the rice then cook in then oven, uncovered for 1 hour or until the rice is cooked.
Step 5
Serve with coriander, almonds and pomegranate seeds
