Get your veg on
Step 1
Preheat the oven to 200°C (390°F). Line 2 baking trays with tin foil. Peel 3 parsnips and 600g (21.2oz) of potatoes.
Step 2
Cut the parsnips into quarters lengthwise and remove the woody core from each quarter - these aren't great to eat so discard them. Cut the parsnips crosswise into 3 pieces.
Step 3
Cut the potatoes into similar sized chunks, then add everything onto a baking tray. Pour over 2 tbsp of oil and a generous pinch of salt. Give everything a good mix to coat the veg in the oil.
Step 4
Roast the veg in the oven for 20-25 minutes, tossing halfway through, until golden in places and soft throughout.
Start the sauce
Step 5
Halve, peel, then finely dice l onion. Put a small saucepan over a medium heat and chuck in 25g (0.9oz) of butter and 1 tbsp of oil.
Step 6
Let the butter melt and foam, then drop in the onion. Fry for 8-10 minutes, until translucent and soft. Peel and mince 2 cloves of garlic, then get on with the rest of the dish while you wait.
Get roasting
Step 7
Chuck 2 gammon steaks onto the remaining lined baking tray. Drizzle over 2.5 tbsp of honey and the remaining 1 tbsp of oil. Sprinkle over 2 tsp of allspice and 2 tsp of cinnamon.
Step 8
Use your hands to coat the steaks with the oil and spices. Remember to always wash your hands after handling raw meat.
Step 9
Roast the gammon in the oven for 10-15 minutes, until the steaks start to curl up and become golden in places.
Finish your sauce
Step 10
Once the onion has softened, chuck in the garlic. Fry everything for a further 2-3 minutes, until fragrant.
Step 11
Chuck 40g (1.4oz) of breadcrumbs into the pan followed by 300ml (10.1floz) of milk, and generous pinches of salt and black pepper.
Step 12
Reduce the heat to low and simmer the sauce for 4-5 minutes, until it thickens to a loose mayonnaise-like consistency. Take the sauce off the heat and set it aside for later.
Get herby
Step 13
Finely chop 10g (0.4oz) of chives and 15g (0.5oz) of parsley. Once the parsnips and potatoes have come out of the oven chuck on the herbs.
Step 14
Toss everything together with a pinch of salt. If you are still waiting on your gammon, now would be a great time to wash up your board and knife.
Serve
Step 15
Load your herby veg onto serving plates, then prop a gammon steak up against each mound. Spoon a generous amount of bread sauce to the side of each plate, then tuck in!
