Pork with Basil and Lemongrass
Fast and easy stir-fry

Ingredients
4 servings
Ingredients:
12 ozPork tenderloin
cubed
2 Tbspsesame oil
4 CWhite button
thinly sliced
1 pczucchini
thinly sliced
2 pcscarrots
thinly sliced
1 CCanned bamboo shoots
drained and rinsed
1 Cwater chestnut
Canned, thinly sliced
1garlic clove
crushed
½ cchicken stock
lime wedges
to serve
basmati rice
cooked, to serve
Marinade
Instructions
Step 1
To make the marinade, mix the lemongrass, fish sauce, basil and lime juice in a bowl. Stir in the pork and toss well to coat. Cover with plastic wrap and refrigerate for 1-2 hours.
Step 2
Heat 1 tbsp of the oil in a preheated wok or skillet over medium heat. Add the meat and the marinade and stir-fry until pork is golden brown. Remove from the wok, set aside and keep warm.
Step 3
Add the remaining tablespoon of oil to the wok on medium heat. Add all the vegetables and the garlic and stirfry for about 3 minutes.
Step 4
Add the pork to the wok and add chicken stock. Cook for about 5 minutes until the stock is reduced.
Step 5
Transfer the stir-fry to a serving dish.
Step 6
Serve with lime wedges and rice of your choice.
