1 cupapplesauce
smooth, sweetened or unsweetened
½ cupsugar
plus 1 tablespoon for sprinkling
½ cuplight brown sugar

2eggs
large, room temperature
¼ cupvegetable oil
¼ cupplain yogurt
or vanilla
1 teaspoonvanilla extract
2 cupsall purpose flour
1 teaspoonbaking powder
½ teaspoonbaking soda
¾ teaspoonsalt
½ teaspooncinnamon
⅛ teaspoonnutmeg
1 cupapple
peeled, cored, and finely diced
½ cupchopped walnuts
Instructions
Step 1
Butter a 9X5 in loaf pan and line it with parchment paper, if using. Set aside. Preheat the oven to 350 F.
Step 2
Combine the applesauce, 1/2 cup of sugar, brown sugar, eggs, oil, yogurt, and vanilla in a medium mixing bowl. Whisk well.
Step 3
Sift the flour, baking powder, baking soda, salt, cinnamon, and nutmeg into a separate large bowl. Make a well in the dry ingredients and add the wet ingredients. Stir until evenly combined.
Step 4
Fold in the diced apple and walnuts. Scrape the batter into the prepared pan and smooth the top with a spoon. Sprinkle with the remaining tablespoon of sugar.
Step 5
Bake on the center oven rack for 50 to 55 minutes, until a tester inserted deep into the center of the bread comes out clean. Transfer the pan to a rack and cool for 10 minutes. Turn the bread out of the pan and cool it thoroughly on the rack before slicing.
