Pork chops with savory Apple bacon hash

Step 1
In a 8 and 1/2 in skillet, cook the bacon over medium low heat until it's rendered it's fat. Move the bacon to the edge of the pan and brown the pork chops in the Bacon fat for two to three minutes on each side. Remove the pork chops from the pan.
Step 2
Add the butter to the pan with the bacon and, once it's melted, turn the heat to medium and add the garlic, onion and potatoes. Stir the vegetables to coat them in the butter and cook them for 5 minutes, stirring occasionally. Add the diced apple and salt and stir, and cook all for another 5 minutes.
Step 3
Pour the vinegar into the pan and stir, scraping up any brown bits off the bottom of the pan. Spread the vegetables onto an even layer and place the pork chops on top cover the pan with a lid and adjust the heat to medium low. Cook the pork chop for 10 minutes, or until the internal temperature is 145° fahrenheit. Garnish the pork chops with the chop chives and serve.
