Chicken Lasagna

Instructions

Step 1
Finely chop the peppers 🫑🌶️ onion and garlic.
Step 2
Heat the olive oil in a large frying pan.
Step 3
Start by adding the garlic 🧄 and saute to release the flavour. Add the onion and peppers. Continue to cook at medium heat until the onion softens and is becoming translucent.
Step 4
ADD the tomato paste and almost a can of water - I use a tiny spatula to get all of the tomato paste. Stir well. ADD the Classico sauce and 3/4 can of tomato 🍅 soup.
Step 5
Continue to cook until the mixture is bubbling. Reduce heat to simmer and add the fresh parsley to the sauce.
Step 6
Remove the meat from the barbeque chicken and slice it thinly. Gently add the chicken to the sauce.
Step 7
Cut the Mozzarella Cheese into thin slices.

Layers

Step 8
Spread a little of the sauce on the bottom of the lasagna dish (avoid getting any chicken with the sauce for this)
Step 9
Place a layer of lasagna noodles on top.
Step 10
I usually use 5 noodles per layer (left, right, middle and two overlapping the left/middle and right/middle). Get it? ☺️
Step 11
Add a layer of the sauce - spread evenly so that the chicken pieces are evenly distributed.
Step 12
Add a layer of sliced mozzarella cheese.
Step 13
Continue with another layer of lasagna noodles, sauce and mozzarella cheese.
Step 14
COVER with foil and BAKE at 325 degrees for about 30 minutes. UNCOVER and continue to bake for another 10 - 15 minutes.
Step 15
Remove from oven and allow some time for the lasagna to set before serving.
