Ingredients
6 servings

1 Tbsolive oil

4garlic cloves

1 cupcelery
chopped

1 cupcarrots
chopped

1white onion
chopped

1jalapeno
very small, seeded and chopped

1 Tbschili powder

1 tspsalt

1 tspcumin

1can black beans
drained

1 x 28 ozcan tomatoes

32 ozchicken broth

2chicken breasts

1 bunchcilantro
half in pot/half for toppings

3limes
for topping

2avocados
for topping
Instructions
Step 1
Saute onion, celery, carrot, garlic and jalapeno in olive oil for 5-8 minutes until onions are soft and translucent, almost caramelized.
Step 2
Add spices and salt and stir for two minutes to open up spices.
Step 3
Add beans, tomatoes and broth and bring to a rolling boil.
Step 4
Add chicken and turn to light boil or strong simmer for 25 minutes.
Step 5
Pull out chicken and shred. While the chicken is being shredded blend or pulse some of the veggies and beans to create a creamy thick consistency.
Step 6
Top with half a bunch of chopped cilantro.
Step 7
Serve with a squeeze of lime, avocado and cilantro.
